I feel like an idiot and I’m very embarrassed. It’s been days since I’ve answered this, and as I flipped through it aloud, I realized what you’re asking…
The term is not Covatis.
The term is Quo vadis.
Quo vadis means in Latin “Where are you going?” It has a history in literature of having metaphorical significance.
Henryk Sienkiewicz wrote a novel called Quo vadis, which is set in AD 64. It is a romance between a Christian, Ligia, and Marcus Vinicius, a Roman patrician.
Ignore the last part of this, which is what I wrote at the start. So embarrassing!
Apparently there is an Italian restaurant in the UK called Covatis (Covatis Restaurant in Market Harborough)

The only reference to a “covatis” haircut on the internet is someone putting “shortcut” and Covatis on a blog and it could be anything.
It’s a family name and it doesn’t seem like much more than that.
Maybe someone somewhere misspelled greedy. I did a little research on “greedy haircuts” and found some pretty nasty sites, so as far as I’m concerned, it’s a dead end not worth pursuing.
