It all depends on how thin the cut is and what you like in a sandwich. Some delis give you half a pound or more of meat in a sandwich, but that’s too much in my opinion, you end up having bites that are just meat.
For your average pound of turkey, I’d say it’s about 20 slices. If you use 5 slices, that’s 4 regular sized sandwiches.
The general rule, in my opinion, is to get 1/4 pound to 1/3 pound of meat per person.

If it’s thin, you’re excluding more slices per pound. If it’s thickly sliced, you’ll get fewer slices per pound, but you’ll never lose meat, it’s the same price and quantity, but not sliced my friend.

I once asked in the deli section of my grocery store how much sliced meat to put in a sandwich. They said 3-4 ounces so 1 pound of meat would make 4-5 sandwiches, thickness wouldn’t be an issue. If you don’t have a scale, visually divide 1 pound of sliced meat into 2 separate piles and divide each pile into 2 more piles. You now have 4-4 ounce servings of deli meats.
