Anyone know how many cups of creamy peanut butter would be 18 ounces and 16 oz of confectioners sugar would be

I don’t know, but each cup is 8 ounces, so maybe 2 cups icing sugar and 2 1/4 cups peanut butter

My favorite peanut butter chocolate chip cookie recipe is super simple and takes longer to preheat the oven than to make. I’ve done it a million times. 1 cup natural peanut butter 1/2 cup sugar (any kind you like, so free to use brown sugar) 1 egg 1 cup chocolate chips (or more or less if you like) Mix in the butter peanut and sugar. Then add the egg and mix until it forms a paste. Add the chocolate chips and stir until combined. Flatten on a baking sheet thick if you like soft cookies and thin if you like crispy cookies. Bake 8-10 minutes at 350 degrees. Less time if they are thinner and longer if they are thicker. Makes about a dozen cookies. Be careful, they are impossible to unmold when they come out of the oven because they are very soft, but as they cool they will harden.

It’s a pound of icing sugar and the dry measurements are a bit different, but most recipes use ounces or pounds for 10 times the sugar. What are you doing?

OZ = weight

It’s different things. Fluid ounces can = 1 cup, but you’re measuring solids, so it’s best to get a small scale and weigh them if that’s how the recipe is written. Many professional cooks (Alton Brown is one of them) almost always use weight measurements because they are inherently more accurate for granular and solid substances.
